Ingredients

  • 1 can (796 mL) AYLMER® WHOLE TOMATOES WITH HERBS & SPICES
  • 1 bottle (375 mL) ginger beer
  • 1/2 cup (125 mL) brown sugar
  • 2 tsp (10 mL) chopped garlic
  • 2 tsp (10 mL) Dijon mustard
  • 2 lb (1 kg) boneless pork roast (such as butt, picnic or shoulder)

Directions

  • Step one

    Preheat oven to 325°F (160°C). Chop tomatoes; combine tomatoes, ginger beer, sugar, garlic and mustard. Place roast in roasting pan; pour tomato mixture over top. Cover with foil.

  • Step two

    Bake for about 3 hours or until pork is very tender. Carefully transfer pork to cutting board. Using two forks, shred pork (discard any large pieces of fat).

  • Step three

    Meanwhile, pour cooking sauce into small saucepan set over medium-high heat; bring to boil. Reduce heat; simmer for 10 to 15 minutes or until thickened. Toss with shredded pork.
