Ingredients
- 1 can (796 mL) AYLMER® WHOLE TOMATOES WITH HERBS & SPICES
- 1 bottle (375 mL) ginger beer
- 1/2 cup (125 mL) brown sugar
- 2 tsp (10 mL) chopped garlic
- 2 tsp (10 mL) Dijon mustard
- 2 lb (1 kg) boneless pork roast (such as butt, picnic or shoulder)

Step one
Preheat oven to 325°F (160°C). Chop tomatoes; combine tomatoes, ginger beer, sugar, garlic and mustard. Place roast in roasting pan; pour tomato mixture over top. Cover with foil.

Bake for about 3 hours or until pork is very tender. Carefully transfer pork to cutting board. Using two forks, shred pork (discard any large pieces of fat).

Meanwhile, pour cooking sauce into small saucepan set over medium-high heat; bring to boil. Reduce heat; simmer for 10 to 15 minutes or until thickened. Toss with shredded pork.
