Ingredients

  • 2 cans (398 mL each) Hunt’s Heirloom® Crushed Tomatoes
  • 2 tbsp (30 mL) vegetable oil
  • 1 lb (500 g) stewing beef
  • 1 lb (500 g) Italian sausages
  • 1 1/2 lb (750 g) baby back pork ribs, halved (about 1 rack)
  • 1 onion, diced
  • 1 carrot, diced
  • 1 stalk celery, diced
  • 3 cloves garlic, thinly sliced
  • 1 tbsp (15 mL) finely chopped fresh rosemary
  • 2 tbsp (30 mL) finely chopped fresh thyme
  • 1/2 tsp (2 mL) each salt and pepper
  • 1/3 cup (75 mL) dry white wine
  • 1/2 cup (125 mL) sodium-reduced chicken broth
  • 2 tbsp (30 mL) finely chopped fresh parsley
  • 1 lb (500 g) rigatoni
  • 1/2 cup (125 mL) grated Parmesan cheese

Directions

  • Step one

    Heat 2 tbsp (30 mL) oil in Instant Pot cooker on SAUTE function set to high heat. Sear beef, sausages and ribs for 3 to 5 minutes or until browned. Remove and set aside.

  • Step two

    Reduce cooker to medium heat. Cook onion, carrot, celery, garlic, rosemary, thyme, salt and pepper for 3 to 5 minutes or until slightly softened. Stir in wine; bring to simmer.

  • Step three

    Stir in Hunt’s Heirloom® Crushed Tomatoes and broth. Return stewing beef, sausages and ribs to cooker.

  • Step four

    Turn off SAUTE function. Cover and lock to seal. Set Instant Pot to PRESSURE COOK function set to high heat for 30 minutes or until meat is very tender. Carefully manually or naturally release pressure according to manufacturer’s instructions before removing lid. Remove sausages, stewing beef and ribs; set aside.

  • Step five

    Turn on SAUTE function; cook for 6 to 8 minutes or until sauce is reduced slightly and thickened. Stir in parsley.

  • Step six

    Meanwhile, cook pasta according to package directions; drain well. Toss pasta with some of the reduced tomato gravy until well coated; serve with sausages, stewing beef and ribs, remaining tomato gravy and Parmesan.

Tips

Use a mix of meats as you like: veal shanks, pork stewing meat, and bone-in chicken thighs all work well in this recipe.

Serve with sautéed rapini or a large green salad if desired.
