Ingredients
- 1 pkg (255 g) Gardein® Plant-Based Be'f Tips
- 1 can (796 mL) Aylmer® Crushed Tomatoes
- 3 tbsp (45 mL) red Thai curry paste
- 2 tbsp (30 mL) olive oil
- 2 tbsp (16 g) finely grated fresh ginger
- 1 tbsp (8 g) finely chopped lemongrass
- 1 onion, diced
- 4 cloves garlic, minced
- 1/2 tsp (3 g) salt
- 1/4 tsp (1 g) pepper
- 2 cups (256 g) jasmine rice
- 1 can (400 mL) coconut milk
- 2 tbsp (30 mL) lime juice
- 3 tbsp (24 g) chopped toasted peanuts
- 2 tbsp (16 g) chopped fresh cilantro
Directions

Step one
In slow cooker, combine Gardein® Plant-Based Be'f Tips, Aylmer® Crushed Tomatoes, curry paste, olive oil, ginger, lemongrass, onion, garlic, salt and pepper; cook on Low for 8 hours or on High for 4 hours until Gardein® Plant-Based Be'f Tips are tender and sauce is thickened.

Step two
Meanwhile, cook rice according to package directions. Fluff with fork and set aside.

Step three
Stir coconut milk and lime juice into curry mixture. Serve over rice; top with peanuts and cilantro.
Tips
For an additional kick, add 1 small seeded and minced Thai red chili pepper to slow cooker.
